In addition to the many examples you mentioned the church is also a multi-national, multi-racial church, that said, multi-culturalism as the word is used today is not a teaching of the church. The word as it is used currently refers more to modernism and moral relativism than a true respect and understanding of other cultures. It is in this sense that the church does not reflect multiculturalism. You left out the mixed imagery of the druidic sun symbol with the Gaelic cross used by St. Patrick to convert the Irish.
